Earth Day is celebrated every April 22nd here in the U.S., but its message is truly universal. Around the world, people pause to honor the Earth and reflect on how we care for it. No matter where you're reading from, this post is for you—a gentle invitation to slow down, breathe in the beauty of this planet, and take small steps that carry a big impact.
As someone who’s supported the Rainforest Trust for over 15 years, this day holds deep meaning for me. I believe with all my heart that change begins in our everyday choices. From what we plant in our gardens to what we serve on our plates, we can live in a way that honors the Earth with love and intention.

Earth Day is a special reminder to slow down and honor the world we live in. Every April 22, people around the globe come together to celebrate our planet and reflect on how we care for it. Earth Day calls us to action and invites us to think about the legacy we’re leaving behind.
As I’ve grown older, this day touches my heart a little more each year. I find myself thinking about the little things—like the scent of fresh-cut grass or the peaceful sound of birds in the morning.
These moments feel more sacred now. They remind me that this Earth is a gift, and we are its caretakers. I’m sure many of you can relate to these simple yet profound experiences.
This year’s Earth Day theme is “Invest in Our Planet.” I love how simple that message is. It reminds us that we don’t need to be perfect; we just need to be present. Even choosing a plant-based meal is a step in the right direction.
Each small choice adds up to something powerful, and it’s our presence in these choices that makes them count.

It all started with one simple idea. In 1970, Senator Gaylord Nelson saw how badly the planet was suffering. Pollution filled the air, rivers were dying, and people were starting to notice. He believed it was time to act, so he called for a nationwide demonstration to support the environment.

You don’t have to do anything grand to make Earth Day special. In fact, the most meaningful changes often start right at home. Small choices can lead to a significant impact. The key is to do something that feels good for your soul and good for the planet.
As women over 50, we carry wisdom and care that can ripple out into our families and communities.
Here are a few lovely, doable ways to honor Earth Day this year:
Plant something with purpose – add a tree or native flowers to your yard. Native plants are easier to care for and help local wildlife thrive.
Join a clean-up – Look for a local event, gather a few neighbors, and tidy up a park or trail. It’s amazing what a couple of trash bags can do.
Make a gentle swap – Replace one everyday item with a more sustainable option. Consider reusable grocery bags, glass food containers, or natural cleaning products.
Reflect outdoors – Spend time in your favorite nature spot. Bring a journal. Write about your favorite outdoor memory or what the Earth means to you now.
Try a plant-based recipe – Cooking a veggie-forward meal is a beautiful way to care for your body and the planet.
Ditch the harsh stuff – Replace one chemical-heavy product in your home with a gentler alternative. Your lungs and the Earth will thank you.
Learn and share – Read a book or watch a documentary about sustainability. Then, share what you learned with a friend or loved one.

The first one is a real showstopper. Roasted Cauliflower Steaks with Chimichurri Sauce bring elegance and comfort together on one beautiful plate. The cauliflower gets crispy around the edges while staying tender inside.
Paired with a bright, zesty sauce, it’s a celebration of everything fresh and green. Plus, this dish uses the whole veggie, helping to cut down on kitchen waste.
Roasted Cauliflower Steaks with Chimichurri Sauce

Ingredients
2 large cauliflower heads
2 Tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
salt and pepper to taste
For the Chimichurri Sauce:
1 cup fresh parsley finely chopped
¼ cup fresh cilantro optional
3 cloves garlic minced
½ cup olive oil
2 Tbsp red wine vinegar
1 tsp dried oregano
¼ tsp red pepper flakes
salt and pepper to taste
Instructions
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
Prepare the cauliflower steaks: Remove the leaves and trim the stem of the cauliflower heads but leave the core intact. Cut each cauliflower into 1-inch-thick steaks (about 2-3 steaks per head, depending on size).
Season and roast: Arrange the cauliflower steaks on the prepared baking sheet. Brush both sides with olive oil and sprinkle with smoked paprika, garlic powder, salt, and pepper. Roast for 25-30 minutes, flipping halfway through, until the cauliflower is golden and crispy around the edges.
Make the chimichurri sauce: In a small bowl, mix the parsley, cilantro, garlic, olive oil, red wine vinegar, oregano, red pepper flakes, salt, and pepper. Set aside.
Serve: Drizzle the chimichurri sauce over the roasted cauliflower steaks and serve hot.

For the Tofu:
1 block (14-oz) firm tofu pressed and cubed
2 Tbsp soy sauce
1 Tbsp cornstarch
1 Tbsp sesame oil
For the Spicy Peanut Sauce:
¼ cup peanut butter (or other nut butter) smooth or chunky
2 Tbsp soy sauce
1 Tbsp lime juice
1 Tbsp maple syrup
1 tsp sriracha adjust to taste
1 clove garlic minced
¼ cup water to thin sauce
For the Bowls:
1 cup cooked brown rice or quinoa
2 cups mixed veggies carrots, bell peppers, broccoli, etc...
1 Tbsp sesame seeds optional
2 green onion sliced, for garnish
Instructions
Prepare the tofu: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Press the tofu to remove excess moisture, then cut it into cubes. In a bowl, toss the tofu with soy sauce, cornstarch, and sesame oil. Spread the tofu cubes on the baking sheet and bake for 20-25 minutes until crispy, flipping halfway through.
Make the peanut sauce: In a bowl, whisk together the peanut butter, soy sauce, lime juice, maple syrup, sriracha, garlic, and water until smooth. Adjust the consistency with more water if needed.
Assemble the bowls: Divide the cooked rice into bowls and top with mixed veggies (you can steam or sauté them lightly). Add the crispy tofu on top.
Drizzle the peanut sauce generously over the tofu and veggies. Garnish with sesame seeds and green onions.

My contribution to Earth day is the work I do with young children around taking care of our trees and the gardens we have in our pre-school. So much learning to do that isn't being done at home. Children tried to cut down a young tree with large plastic spades and told me they hated trees. A big discussion was had on the importance of trees and then we bandaged the tree because they had completely ring-barked it (taken off the bark in a complete circle). Which will kill the tree.
