Even better, this dish comes together in about 30 minutes. It’s quick enough for a busy weeknight, yet it still feels like a delicious hug in a bowl. On tax day or any tough day, that’s exactly what you deserve.
Creamy Vegan Gnocchi with Mushroom & Spinach

Ingredients
1 lb vegan potato gnocchi
1 tsp olive oil
1 Tbsp vegan butter
3 cloves garlic minced
1 small yellow onion finely diced
8 oz (225g) cremini or baby Bella mushrooms sliced
4 cups fresh spinach
1 cup full-fat canned coconut milk or cashew cream
1 Tbsp nutritional yeast
1 tsp Dijon mustard
salt and black pepper to taste
Optional: pinch of red pepper flakes or chopped fresh parsley for garnish
Instructions
Boil the gnocchi: Bring a large pot of salted water to a boil. Cook the gnocchi according to package instructions (they’ll float when ready—like little pasta clouds!). Drain and set aside.
Sauté aromatics & mushrooms: Heat olive oil and vegan butter over medium heat in a large skillet. Add onion and cook for 3–4 minutes, until translucent. Stir in garlic and cook for 30 seconds.
Add sliced mushrooms to the pan. Sauté for 5–7 minutes until golden and their moisture has evaporated.
Lower the heat and stir in coconut milk, nutritional yeast, and Dijon mustard. Simmer for 3–4 minutes until slightly thickened. Season with salt and pepper.
Toss in the spinach and stir until just wilted. Add the cooked gnocchi and gently stir to coat everything in that creamy goodness.
Spoon into bowls, sprinkle with fresh parsley or chili flakes if desired, and serve warm. Optional: serve with crusty bread to mop up every last drop!

1 Tbsp olive oil
2 cloves garlic minced
2 medium carrots diced
1 stalk celery diced
1½ cups butternut squash peeled and cubed
1 cup dry green or brown lentils rinsed
1 tsp ground cumin
½ tsp smoked paprika
½ tsp ground coriander
¼ tsp turmeric optional
1 (14-oz) can diced tomatoes
4 cups vegetable broth
1 bay leaf
salt and black pepper to taste
juice of ½ a lemon
Optional: handful of chopped kale or spinach stirred in at the end
Fresh parsley or cilantro for garnish
Instructions
Sauté base veggies: Heat olive oil over medium heat in a large pot. Add onion, carrot, and celery. Cook for 5–6 minutes until softened.
Stir in garlic, cumin, paprika, coriander, and turmeric. Cook for 1 minute until fragrant.
Simmer the stew: Add lentils, butternut squash, diced tomatoes, vegetable broth, and bay leaf. Bring to a boil, then reduce to a gentle simmer. Cover and cook for 35–40 minutes, stirring occasionally, until lentils and squash are tender.
Remove the bay leaf. Stir in lemon juice and optional greens. If adding kale or spinach, simmer for another 5 minutes. Adjust salt and pepper.
Ladle into bowls, sprinkle with fresh herbs and serve with crusty bread or over rice if desired.
