Great article, thanks for sharing! I lost 20 pounds when I went gluten free because of allergies. But I was eating a lot of finally processed breads. I eat a whole lotta whole food, plant-based carbs these days and lost about 8 more pounds (I was originally 154 lbs. at 5'.5" when I went gluten free). I've been able to maintain a weight of 128 lbs. for a year eating loads of whole food carbs.

Hi Julene. I'm not sure you want me sharing my story here because it has been the opposite to yours. But I'm sharing it because I know how supportive you are. I tried to lose weight eating carbs and I never could. Actually not true, I did lose weight eating carbs plus meat etc, but I had to run an hour a day and do a few 1.5 hour sessions of yoga each week to achieve it. When I developed osteoarthritis in my knee and couldn't exercise to that extent the weight started piling back on. I'm in the first stage of your gentle carb acclimatisation recommendation and we'll see how we go. Because I've dropped a lot of weight I can now exercise more again, so I'm sure that's helping me to eat more carbs. 🥰
